The typical eritrean cuisine is characterized by spicy flavoured dishes. Spices are one of the most important products of erirean agricolture, and are largely used in food preparation.
The basis for most principal dishes (usually they are the only course, there is no separation between variuos courses in eritrean tradition) is the meat, very tender, cut in small pieces and cooked in spicy sauces, usually hot, as the Berbere sauce. The name of this preparation is Tzebhi. The Tzebhi is usually served with vegetables and pulses, cooked in various manners.
The main course dish is composed in a characteristic way: on a large dish, from which all the table-companion will draw with the right hand, is first prepared a layer composed by the eritran typical bread, that is not leavened and has a spongeous consistency, called Ingera, traditionally cooked on a red-hot plate usually made of stone, like in eritrean traditional kitchens. The Tzebhi finds its place to the center, often with a sauce called Awaze, prepared with different herba, red and spicy. All around, near the edges,there are vegetables and pulses, where lentils can't miss.
In Italy is well known the composition called Zighini, that the Asmara Restaurant offers in various versions: the typical preparation, spicy and meat-based, but also a not spicy version and a vegetarian version.
